restaurant does also breakfast al la carte as well as breakfast buffet and lunch a la carte and lunch buffet. Dinner is up scale seafood restaurant

Salary is USD $4,000 and maybe a bit More.. plus all expatriate benefits which at this level are quite good

·         Must have at least 10 years of experience primarily in traditional European cuisine and ALSO familiar with Asian cuisine

·         Must have experience in creating high quality product in a up scale dining cuisine in a 5* international restaurant/hotel environment for the last 5-6 years

·         Must also have knowledge and experience upscale seafood restaurants

·         the European Seafood Executive Sous Chef has a strong knowledge of upscale buffet and a la carte breakfast, lunch and dinner production and menus

·         Experience with well known international chefs would be an advantage

·         Focuses on the highest possible quality standards

·         Installs an atmosphere that encourages his/her team to share ideas, discuss concerns and come up with new ideas

·         Knowledge of HACCP is essential to ensure high standards of hygiene and work methods are met

·         Pre-opening experience would be an advantage

·         Plans menus that satisfy the local as well as the international market

·         Goes above and beyond guest expectations in order to encourage repeat business

·         Able to direct and guide a kitchen team to provide a consistent high quality of food

·         Can identify and develop new products and equipment to make improvements

·         Is able to define and develop high quality standards of food preparation and presentation

·         Is continuously updated with the latest European/Asian food trends around the world

·         Able to anticipate seasonality of products around the world and plans menus accordingly

·         Controls food and labour costs within the approved budgets

·         Prior experience of food order purchasing systems would be beneficial

·         Computer skills essential (Microsoft Word and Excel)
