This is a chef position at a fast casual restaurant so the candidate does not necessarily need to be a culinary school grad or have worked in prestigious restaurants.  The food is authentic Taiwanese and Mandarin home style classics, not fusion, not fine dining.  The candidate must have at least a limited speaking proficiency in Mandarin and some kitchen management experience.  Most importantly, the Head Chef candidate should be very familiar with Taiwanese and Mandarin home style cuisine.  The ideal candidate would have grown up eating Taiwanese beef noodle soup, zha jiang mian, dan dan mian, really understand the correct flavors, and not be a star chef with an ego who always puts his own spin on things.  This restaurant is about authenticity and quality, not flashy foams, gelees, gastriques, etc.
Job description

We’re a hip, fast casual noodle restaurant opening in early 2014. We will be located in the Uptown district of Oakland, CALIFORNIA, a bustling, trendy neighborhood with heavy lunch and dinner foot traffic. Our neighbors will include The Fox Theater, The New Parkway Theater, Dogwood, Flora, Plum Restaurant and Bar, Farley’s, and Duende. 

Our mission is to provide the San Francisco Bay Area with authentic Chinese noodle dishes that go far beyond chow mein and wonton noodle soup. We make the delicious noodles of Taiwan, Western China, and Northern China accessible to those who have often found trips to restaurants focusing on cuisines from these regions daunting. We warm the hearts of those who grew up eating these dishes by providing high-quality, modernized versions of their childhood favorites.

This is a unique opportunity for a bright and ambitious chef to join us in co-founding this restaurant. You will be driving BOH setup, management, and operations and collaborating with the owner to develop the menu. You will be a part of recruiting your BOH crew, who will report directly to you. Your extensive experience as a chef and kitchen manager will be competitively compensated, and a generous sign on bonus is offered. We’re especially excited to meet you if zha jiang mianniu rou mian, and dan dan mian happen to make you nostalgic for your childhood.

Job Description 

• Full time (lunch and dinner services) 
• Develop menu and specials in collaboration with owner 
• Source and negotiate supplier agreements 
• BOH set up and operations 
• Purchasing, receiving, inventory management, order guides
• Prep lists, par levels 
• Food and labor cost analysis 
• Train, schedule, and supervise kitchen staff 
• Maintain equipment service schedule
• Train staff on proper equipment usage
• Enforce workplace safety procedures 
• Portion control, quality control


• Mandarin speaker
• BOH management and mentorship experience
• Purchasing, receiving, inventory management
• Cost control experience
• ServSafe certified
• Organized
• Excellent time management skills
• Passion for and ability to make delicious Mandarin food
