Japanese Executive Chef job Ramen and Soup, Vietnam

  • Only Japanese nationals – resident of any country
  •  Basic salary (net): around $3-4K USD /mo.
  • One – year; six – month labor contract; or consulting – contract
  • 13th month salary based on actual working time of the year
  • Performance bonus based on appraisal and Company’s business situation
  • Bonus for the occasions of Japanese and Vietnamese holidays
  • Bonus based on the efficiency of the project.

Job title and description: Executive Chef Japanese Restaurant

Targets to be achieved:

  • New concept (all about ramen) to be perceived as genuine Japanese restaurant 
  • Back of house of new concept will be successfully operated
  • Identify the new concept restaurant in order to improve food quality and customer satisfaction

New product development:

  • Creating formula for Noodles Broth for examples: Shio, Soya, Miso, Tonkatsu, Black
  • Creating procedure to make broth ( from pig and chicken bones)
  • Make research of formula, processing procedure, layout of new food products based on oriented purposes from R&D Manager
  • Do the food modality and testing
  • Cooperate with Purchasing Department to define tools and material.
  • Standardizing productive standard portfolio including way to preserving, food hygiene.
  • Cooperate with Operation to follow project and time to launch new concepts

Representative of Golden Gate New Concept 

  • Involved in images, marketing campaign, press release, and campaign for launching and marketing fthe new concept.

People development for kitchen staff and chefs of related concept restaurants

  • Conduct training, coaching, on the job training for kitchen staff and executive chefs so that they can handle job tasks

Other improvements projects for food quality and customer satisfaction

  • Follow and assessing food quality launching at restaurants. Make change or improve food formula if needed to enhance food quality. Taking part in the follow – up and make assessment quality improvement procedure.


  • Knowledge and skill about Japanese cooking
  • Deep knowledge about making Ramen Noodles
  • Management skill
  • Knowledge and follow food hygiene requirements.


  • Intermediate level of cooking 

Experience and Seniority

  • 5~7 years of experience working in restaurant in chains, Casual & Fine Dining

 Other requirements 

  • Sex: Male 
  • Age: above 30
  • Characteristic:  Creative, working under high pressure.
